We searched high and low in order to find the most luxurious and delicious specialty foods that'll knock your socks off. Mercedez Singleton, the General Manager of the cafe section, wanted to present our customers with a selection that enticed the food enthusiast in all of us. You may walk away with something you never even knew existed!!
Every once in a while we are going to have product features that spotlight one of the pantry items in the cafe. First up is Big Spoon Roasters nut butters. Each one is handcrafted from scratch in Durham, NC with carefully selected nuts and wildflower honey. The nuts are roasted, milled, and packaged while it's still warm to the touch in order to produce a product that's fresh, delicious and nutritious.
Founder Mark Overbay "has had a passion for discovering new flavors, slowing down to savor every bite, and connecting people to the land, to better health, and to each other through food". He learned his magic while living in a rural farming community in Zimbabwe back in 1999. There he learned how roasting peanuts over an open fire and grinding them by hand created a deliciously fragrant result when mixed with salt and honey. He then devoted the next 10 years of his life promoting the connection between nutrition and health, turning this passion into a business in early 2011 by starting Big Spoon Roasters.
Big Spoon's philosophy on food stretches not only to their own product but also to the trusted and transparent farms and producers they source their ingredients from. Working with local and regional peanut farmers allows for a positive market force for sustainable agriculture.
We've got 4 different types of nut butters for you to get excited about. Let us tell you a little bit about each one.
1. PEANUT ALMOND BUTTER
California is a pretty chill place, which is why they roast their California almonds a little slower than usual at lower temperatures to caramelize them a bit more than the peanuts, bringing out the sweet aroma and signature crunch. Did you know that almonds are one of the world's richest sources of natural vegetarian protein? Let's get healthy with deez nuts.
2. CHAI SPICE
Take the original nut butter base and add some traditional Indian tea spices and you got yourself a complex burst of flavor in every spoonful. This Chai Spice mixture is a Masala Chai blend of cardamom, cloves, ginger, cinnamon, vanilla, and black pepper, slowly mixed in with peanuts, almonds, salt and honey. Color me interested.
3. COCOA NIB
Inspired by Raleigh-based friends at Escazu Artisan Chocolate, this tasty blend includes 65% of Escazu's cacao dark chocolate from Costa Rica (a Good Food Award winner) and cocoa nibs (crunchy pieces of roasted cocoa bean that have been separated from the husk) mixed in with the nut butter base. Try it with some ripe berries and fresh yogurt. Divine!!
4. MISSION ALMOND BUTTER
The heirloom Mission variety almond (discovered in TEXAS btw) is known as a late bloomer compared to some of the more socially acceptable varieties. Mission almonds like to take their time and require a longer roast time that offers a deeper concentration of flavor. Made only with freshly roasted and milled Mission almonds blended with raw North Carolina wildflower honey and sea salt, this intentionally simple treat is straight up delicious.
