Mayonnaise is one of those products that needed a shot of excitement for a long while. Why didn't we think of this first??? Well, that's because Empire Mayo already beat us to it. And luckily they did! Now we get to share this delicious treat with you as well. It's the perfect way to add a little flavor to your recipes.
In 2011, chef Sam Mason and designer Elizabeth Valleau decided to spruce up some mayonnaise with exotic flavors and formulations. They use non-GMO oils, local pasture-raised eggs, along with local and seasonal flavors. Local of course being our old stomping ground of Brooklyn.

Ahhhhh the smell of bacon, it's enough to make any morning riser awake with a smile. They took extra care to find the perfect mixture of sweetness, smokiness, and rich bacon love. They use a heritage pork bacon that's applewood smoked, antibiotic free, vegetarian fed, and family farm raised! Perfect on egg sandwiches, burgers, salads, baked potatoes and FRIES.
Ingredients: Non-GMO canola oil, pasteurized local egg yolks, Heritage Smoked Bacon, vinegar, salt, trace xanthan and guar gums
Imagine fermenting bulbs of garlic at really high temperatures to create glossy black cloves. HOLY MOLY. Then they added a bit of black bean for some extra tang. This could basically be applied to anything. Garlic lovers unite!

They cold press all of their oils with the spices to create a unique flavor you can't get with just combining the two. They get a highly concentrated pure oil and then strain it for a smooth velvety mixture with no grittiness.
