Chai is a fascinating part of the often mystical and ever changing legacy of the Ayurvedic tradition. Chai is a historical, ceremonious and daily task of brewing herbs to be made into a tisane (a herbal drink, devoid of tea leaves). Chai is and was consumed for the sole purpose of bringing imbalances back into balance, and the body back into union with the mind.
To be a bit more specific, the long standing tradition of Ayurvedic medicine, which is the mother of Chai, places a large emphasis on identifying certain qualities of a person's physical characteristics and personality in order to make a unique blend of herbs and spices to bring the body back into spiritual, mental and physical alignment. Chai drinking is a big part of this type of medicine, because for a long time, herbs were all that we had to cure our communities, and a drink was a good way to take your medicine.
In India, the chai as we know it is actually called Masala. The word chai simply means tea. Interestingly tea did not make its way into traditional chai until the British began to grow the camellia sinensis(tea) bush in the region of Assam. As its production in India grew, consumption was encouraged and slowly the caffeinated tea leaf made its way into Masala chai blends.
Evergreen Chai manifested into its present day form after steeping many pots of tea, which were always full of interesting combinations of dried and fresh herbs. We committed our hearts to crushing, toasting and combining those spices and herbs with evaporated cane juice sugar to delight the senses, lemon juice to intrigue the taste buds and sea salt to round out the flavor. Foremost, we wanted every herb and spice to ultimately have a delicate flavor, while still being distinguishable from one another.
The divine flavor of our chai comes from just a few components of specially selected, high quality, sustainably cultivated ingredients and are sent through rigorous tests before reaching our brewing kitchen. The herbs of our chai also have their own medicinal qualities, carrying on the ancient and special tradition of India. Cardamom, black peppercorn and fennel are all known for their ability to soothe the stomach. Black pepper is also known for its ability to reduce levels of inflammation within the body. Black tea and fennel are also full of amazing antioxidants. These qualities are not dulled or lessened because our chai is blended and brewed several times a week, insuring that the quality of the chai is the highest you could find.
For us, making chai is a ritual, something to brew for each other and for people we love. Ultimately chai is a a song, a gift from the Earth, which lends its beautiful and majestic spices to us, so that we can create something delicious and beneficial.
